GRAPE VARIETIES: Syrah – Grenache
YIELD: 36 hl/ha
HARVESTING: By hand. Harvested at optimal maturity.
VINIFICATION: Destemming, cold maceration, temperature-controlled fermentation, remontage (the pumping over of juice) and délestage (rack and return). 30 days skin contact. Pressing done by pneumatic press.
AGEING: In concrete vats.
TASTING NOTES: The Grenache & Syrah grape varieties bring out a lovely cherry colour with violet highlights. A very pleasing nose – fruity, with notes of undergrowth and spices. In the mouth, savoury tannins which are firm yet mellow.
AGEING POTENTIAL: 6 to 8 years.
SERVING TEMPERATURE AND GUIDELINES: Serve at room temperature. Open several hours before drinking (a little time in a carafe will bring out its full range of flavours).
